Orange Chocolate Chunk Blondies

An easy and sophisticated blondie, these squares have a lovely almost cookie like texture. The combination of orange and dark chocolate make these blondies classy and perfect for enjoying with a cup of coffee


Makes 9-12 blondies


Ingredients

1 cup butter, softened

1/2 cup light brown sugar

1/4 cup white sugar

Zest of 2 oranges

2 eggs

2 cups flour

1 tsp baking powder

1/2 tsp salt

1 1/4 cup dark chocolate chunks

1 tbs cane or demerara sugar


Directions

1. Preheat the oven to 350 F. In a kitchen mixer fitted with the paddle attachment or with an electric hand mixer, cream together the butter, both sugars, and the orange zest, reserving about 1 tsp of zest for the top. Once light and fluffy, and the eggs, one at a time, beating well after each addition.

2. Add the flour, baking soda, and salt, and continue to mix on low until just combined. Add the chocolate chunks and mix on low until combined.

3. Transfer the blondie batter to an 8x8 brownie pan lined with parchment and greased. In a small bowl, combine the cane/demerara sugar and remaining orange zest. Sprinkle over top the blondie, and bake for 30 minutes until set.

4. Allow the blondie to cool for 10-15 minutes before transferring it to a cutting board. To remove it from the pan, lift the parchment paper carefully and the whole thing will come out. Cut into 9 squares or 12 bars. Serve with tea or coffee.
