Grilled Honey Garlic Wings with Spicy Blue Cheese Dip

I think I have officially covered to a grilled wings over fried wings girl. I love how easy they are to make and the beautiful grill marks on them after. These are a perfect sweet and spicy summer meal, with a spicy blue cheese dipping sauce. The addition of sriracha hot sauce in both the dipping sauce and the wing sauce tie the whole dish together, and add a subtle element of heat.


Makes 3-4 servings


Ingredients:

FOR THE BLUE CHEESE DIP

1/3 cup sour cream

1/3 cup mayonnaise

1/4 cup sriracha hot sauce

2 tbs lemon juice

1 tsp salt

1 tsp black pepper

1/2 cup blue cheese crumbles

1/4 cup milk or buttermilk


FOR THE WINGS

2.5 lbs chicken wings (approx 24 drums and wings)

1 tbs olive oil

1 tsp salt

1 tsp black pepper

1 tsp grated garlic or garlic paste

1/3 cup honey

3 tbs soy sauce

1 tsp sriracha hot sauce

1 tbs sesame seeds

1 tsp ginger, fresh or paste

4 cloves of garlic, minced

1 tbs (4-5) green onion stalks finely chopped (save the greens for garnish)

1 tbs fresh cilantro


Directions:

1. In a large bowl, put the wings, olive oil, 1 tsp salt, 1 tsp pepper, and grated garlic/garlic paste. Mix well to coat all of the wings, and set aside as you make the blue cheese dip.

2. Put all of the ingredients for the blue cheese dip in a mixing bowl except for the blue cheese crumbles and the milk/buttermilk. Whisk well until fully combined. Gently stir in the blue cheese. Add the milk, 1 tablespoon at a time, mixing well after each addition, until you get your desired consistency. For a thinner dip, add more milk. For a thicker dip, add less milk. Store in the fridge until the wings are done.

3. Make the honey garlic sauce. In a small saucepan, combine the honey, soy sauce, 1 tsp sriracha sauce, sesame seeds, ginger, minced garlic cloves, and green onion stalks. Bring to a simmer over low heat on the stove. Let it simmer for 8 minutes, stirring often so it doesn’t boil over. Remove from heat and set aside.

4. Preheat a gas grill to medium heat, about 350-400 degrees. Once the grill is hot, place the chicken wings on, skin side down. Cover the lid and let the wings cook for 10 minutes. After 10 mins, flip the wings and close the lid again, cooking for another 10 minutes on the other side.

5. Once done, put all of your wings in a large bowl. Drizzle with the honey garlic sauce and toss well, making sure to coat all wings in the sauce. Garnish the wings with green onions and cilantro. Serve with spicy blue cheese dip.
