Classic banana bread meets chocolate covered strawberries. This ooey gooey dessert banana bread is the perfect decadent dish for your next brunch. The batter itself is so easy - as extravagant as it sounds, it’s actually a one bowl dessert. Alternating scoops of banana bread batter and Nutella gives you swirls of chocolate throughout the bread, melty in some parts and caramelized in others.
Strawberry Nutella Banana Bread
Prep Time: 15 minutes Cook Time: 65 minutes Yield: 1 9-inch loaf
INGREDIENTS
1/2 cup butter, melted, plus 1 tbs to grease the loaf pan
1/2 cup white sugar, plus 1 tbs for the loaf pan
1/2 cup brown sugar
2 eggs
3 overripe bananas, mashed
1 tsp vanilla extract
2 cups flour, plus 2 tsp to toss strawberries in
1 tsp baking powder
1 tsp baking soda
1/4 tsp ground cinnamon
A pinch of salt
1/2 cup chocolate chunks (mix of milk and dark)
1 cup strawberries, diced, plus 1-2 strawberries sliced for garnish
1/3 cup Nutella (or any Nutella hazelnut spread)
DIRECTIONS
Preheat the oven the 350 F. Grease a 9x5 inch loaf pan with 1 tbs softened butter, then sprinkle it with 1 tbs sugar. In a large mixing bowl, add the melted butter and sugars. Whisk well until fully combined. Add the eggs and whisk again until combined. Finally, add the mashed banana and vanilla extract, and whisk again until fully combined.
Add the flour, baking powder, baking soda, cinnamon, and salt to the batter. Whisk until the batter gets thick, then switch to a spatula or wooden spoon and fold until the dry ingredients are just combined. Starting with the whisk will help distribute the dry ingredients throughout the batter so you don't have to sift them in.
In a small bowl, mix the diced strawberries together with 2 tsp flour. Stir to coat, then add to the batter with the chocolate chunks, reserving about 1 tbs for garnish. Use a spatula to fold into the batter until just combined.
Using a cookie scoop, scoop about a third of the banana bread batter into the loaf pan. Once the bottom is covered, scoop in about half of the Nutella, then cover with another third of the batter. Scoop in the remaining Nutella, then the remaining batter on top. Scatter the reserved sliced strawberries on top, and sprinkle with the reserved chocolate chunks. You can bang the loaf pan on the counter one or two times so that the batter fills in any blank spaces and gets more evenly distributed. Bake for 55-65 minutes on the middle rack. Let cool for 15 minutes before removing from the pan and slicing.
