Nutella Stuffed Chocolate Covered Strawberries

Prep Time: 45 minutes Cook Time: 0 minutes Yield: 12 chocolate covered strawberries

INGREDIENTS

  • 12 strawberries

  • 1/4 cup cream cheese, softened

  • 1/3 cup Nutella or other chocolate hazelnut spread

  • 2 tbs powdered sugar

  • 300 g (about 1 & 3/4 cups) semi sweet chocolate OR milk chocolate OR a mix of both

  • 40 grams (about 1/4 cup) white chocolate

  • 1/2 tsp vegetable or coconut oil

  • Pink and red sprinkles (optional)

  • Chopped toasted nuts of choice like almonds, hazelnuts, etc (optional)

DIRECTIONS

  1. Wash and throughly dry the strawberries, then cut off the stems. Using a sharp pairing knife, hollow out the insides of the strawberries.

  2. Using an electric mixer, whip together the Nutella, cream cheese and powdered sugar until fully combined. Transfer the contents into a piping bag. Pipe the filling evenly into each of the strawberries, and place on a small parchment or foil lined baking tray or plate.

  3. Add the semi sweet/milk chocolate into a microwave proof bowl. Microwave the chocolate in 10 second intervals, stirring between each session in the microwave. If you are using a lower quality chocolate, when the chocolate is 75% melted, add a drop of vegetable or coconut oil to it to help liquify it. In total, you shouldn't need to microwave the chocolate for more than 80 seconds total.

  4. Using a fork, carefully dip each strawberry into the melted chocolate. Gently use the fork to push the strawberry around the bowl to fully cover the whole thing. Lift the strawberry out of the bowl with the fork, and gently shake to remove excess chocolate. Place back on the lined baking tray or plate.

  5. Melt the white chocolate the same way you melted the semi sweet/milk chocolate, with 10 second intervals in the microwave. Again, add a few drops of oil when almost melted if needed. Transfer the white chocolate into a ziplock baggie, and cut a very small hole at the tip. Drizzle the white chocolate evenly on each strawberry. If desired, sprinkle the strawberries with sprinkles and/or chopped nuts.

  6. Put the strawberries in the fridge to harden. Once the chocolate has hardened, serve.
