No Bake S’mores Bars




Smore's are one of the best parts of summer. Make them inside with these special no bake s'mores bars. Graham crackers topped with a thick chocolatey filling and piled high with marshmallow fluff, these messy little treats will bring out the kid in you.


 

No Bake Smore's Bars


Prep Time: 1 hour 45 minutes Cook Time: 0 minutes Yield: 8-12 servings


INGREDIENTS

For the crust

  • 2 & 1/2 cups graham cracker crumbs

  • 1/2 cup + 2 tbs butter, melted

  • 2 tbs honey

  • 1/2 tsp applewood smoked sea salt

For the Chocolate Filling

  • 200 g milk chocolate, chopped in small pieces

  • 100 g dark chocolate, chopped in small pieces

  • 3/4 cup heavy cream

  • 1/4 tsp applewood smoked sea salt

For the Marshmallow Topping

  • 2 cups (454 g) marshmallow creme/fluff


DIRECTIONS

  1. Combine all of the ingredients for the crust in a mixing bowl; transfer to a parchment lined baking dish. Press down to make a firm base, then freeze while you make the filling.

  2. Add the heavy cream to a microwave safe bowl, and microwave for 60-90 seconds. The cream should be hot but not boiling. Add the chocolate to another mixing bowl. Pour the heavy cream and salt over the chocolate and let it sit for 30-45 seconds. Stir until the chocolate is completely melted - if there are still chunks of chocolate at the end, microwave for 10 seconds then stir, and repeat till smooth (shouldn’t take longer than 30 seconds total). Pour the chocolate over the cooled graham crust and freeze 10 mins.

  3. Dollop the marshmallow fluff over top the cooled chocolate and smooth over. Freeze for 1 hour.

  4. Before cutting, lightly torch the marshmallow with a kitchen torch. Don't hold the flame too close to the marshmallow to avoid burning - you want it to turn light brown, but not to blacken too much. Cut into big or small squares. You can freeze for another 15 mins to make it easier to separate, or serve right away.
