Blueberry Vanilla Goat Cheese Log




This beautiful appetizer is perfect for serving to a crowd, but after you try it, I’m almost positive you’ll be eating it yourself. It’s a great combo of sweet, tangy, savoury, and I KNOW it might sound a little odd to have garlic and vanilla in the same recipe but believeeeee me, it gives this recipe a lovely flavour profile.

 

Blueberry Vanilla Goat Cheese Log


Prep Time: 1 hour 15 minutes Cook Time: 10 minutes Yield: 4-6 servings


INGREDIENTS


  • 1 cup fresh blueberries

  • 3 tbs honey

  • 1 tbs lemon juice

  • 1 clove garlic, smashed

  • 2 sprigs fresh thyme

  • 4-5 basil leaves, torn

  • 2 tbs vanilla balsamic vinegar

  • 1/4 tsp vanilla extract

  • A pinch of flaky sea salt

  • 2 tbs pistachios, finely chopped

  • 300 g goat cheese log



DIRECTIONS

  1. Combine all of the ingredients except for the pistachios and the goat cheese in a saucepan. Bring up to a simmer on medium heat and cook for 9-10 mins. Remove garlic clove after 5 mins, and the thyme stems after 10 mins. Let it cool completely for 10-15 mins.

  2. Sprinkle the crushed pistachios on a plastic wrap lined baking tray, then spread the cooled blueberry spread over top. Place the goat cheese log in the centre and roll up to completely cover the goat cheese in the blueberry spread. Refrigerate for a minimum of one hour. When ready to serve, unwrap and serve with crackers and baguette.
