Bacon Wrapped Peach Skewers

I love a good sweet and salty skewer combo. Fresh peaches steal the show in these easy summer skewers. Pair them up with bacon, halloumi cheese and sweet bell peppers and you get a gourmet skewer that tastes like it took a lot longer to make. You can replace the peaches in this recipe with any juicy fruit you like grilling. Try apricots, plums, or pineapple - they all pair really well with the halloumi.


 

Bacon Wrapped Peach Skewers


Prep Time: 15 minutes Cook Time: 25 minutes Yield: 4 skewers


INGREDIENTS

  • 4 peaches, quartered

  • 160 g halloumi cheese, cut into 16 squares

  • 1/4 cup fresh basil, minced

  • 1/4 cup balsamic vinegar

  • 2 tbs olive oil

  • salt and pepper

  • 8 slices bacon, cut in half

  • 2 long sweet pepper, large diced

  • grilled baguette, to serve


DIRECTIONS

  1. In a mixing bowl, combine the peaches, halloumi, sweet peppers, basil, balsamic, olive oil, and salt and pepper. Mix well and allow to marinate for 5-10 minutes.

  2. Wrap each peach quarter in a half slice of bacon. Skewer the peaches, halloumi cheese and peppers evenly onto 4 skewers.

  3. Place the skewers on the top rack of a barbecue preheated to 350 F. Turn the heat down to low and cover the lid of the barbecue. Allow the skewers to cook until the bacon is crispy, 15-25 minutes total, turning the skewers every 5-7 minutes.

  4. Serve the skewers immediately with grilled baguette.
