20 minute Jalapeño Popper Quesadillas




A quickie for your recipe book, because who doesn’t love a 20 minute recipe? Especially when it’s a jalapeño popper inspired recipe. This quick quesadilla is stuffed with jalapeños, cream cheese and bacon to for a tasty lunch or snack ready in no time.


 

20 minute Jalapeño Popper Quesadillas


Prep Time: 5 minutes Cook Time: 15 minutes Yield: 4 quesadillas


INGREDIENTS

  • 2 slices bacon, minced (reserve grease for frying quesadillas)

  • 1/2 cup cream cheese, softened

  • 1 & 1/2 cups cheddar cheese, grated

  • 3 tbs pickled jalapeños, minced (use less for less heat)

  • 1 tsp vinegar from the pickled jalapeños

  • 1 tsp garlic powder

  • Salt and pepper to taste

  • 8 medium flour tortillas

  • 1-2 tbs oil (I used olive oil, you can use vegetable/canola)

  • Cilantro and lime for garnish


DIRECTIONS

  1. In a small frying pan, crisp the bacon oven medium heat. Once crisp, remove the bacon and add it to a small mixing bowl. Add the bacon grease to the oil and set aside.

  2. To the mixing bowl with the bacon, add the cream cheese, cheddar cheese, pickled jalapeños and vinegar, garlic powder, and salt and pepper. Mix very well until fully combined.

  3. Divide the mixture evenly between 4 tortillas, spreading to cover the whole base. Place another tortilla on top of each quesadilla.

  4. In the same frying pan used to crisp the bacon, add some of the reserved bacon grease/oil. Heat over low. Once hot, add a quesadilla, and brush the top side with more bacon grease/oil. Cook on each side for 2-3 minutes, until cheese is melted and tortillas are golden. Repeat until all quesadillas are cooked.

  5. Serve with cilantro and lime.
