This Pumpkin Pie Parfait is more of a dessert parfait than a breakfast one, but since it’s still made with yogurt, it isn’t overly sweet. Replace pie crust with Pecan Pie Granola by More Granola and watch this dish disappear in a flash.
15 Minute Pumpkin Pie Parfaits
Prep Time: 15 minutes Cook Time: 0 minutes Yield: 2 parfaits
1 1/2 cups plain yogurt
1/2 cup pumpkin purée
1/4 cup brown sugar
1 tsp pumpkin pie spice
1/2 tsp vanilla extract
A pinch of sea salt
1/2 cup whipping cream
2 - 3 cups granola
In a mixing bowl, whisk together the yogurt, pumpkin purée, brown sugar, pumpkin pie spice, vanilla extract, and sea salt until fully combined. Set aside.
In another mixing bowl, whisk the whipping cream with an electric mixer on high until stiff peaks form, 3-5 mins. Alternatively, whisk by hand until stiff peaks form, 7-10 mins.
Fold the whipping cream into the yogurt mixture with a rubber spatula until just combined.
To assemble your parfaits, alternate putting a little bit of granola into the bottom of a long glass or a bowl, then spoon some of the yogurt mixture onto the granola. Repeat until all of the ingredients are done, or until the glass/bowl is full. Enjoy right away.
