Gingerbread Apple Blondies

Anyone else been holiday bakin’ up a storm? Add these easy Gingerbread Apple Blondies to your roster. Made moist with molasses, and spiced with all your holiday faves (cinnamon, nutmeg, ginger, the list goes on), these blondies are moist, fluffy, and tasty.

Makes 12-16 blondies


Ingredients

3/4 cup butter, softened

1/2 cup light brown sugar

1/4 cup white sugar

1/4 cup molasses

2 eggs

2 cups all purpose flour

1 tsp ginger powder

1 tsp ground cinnamon

1/4 tsp grated nutmeg

1/4 tsp ground cloves

1/4 tsp ground allspice

1 tsp baking powder

1 tsp salt


Directions

1. Preheat the oven to 350 F. In a mixing bowl, combine the flour, ginger, cinnamon, nutmeg, clove, allspice, baking powder, and salt. Stir to combine.

2. In the bowl of a kitchen mixer, combine the butter, sugars, and molasses. Using the paddle attachment, cream on medium speed until light and fluffy.

3. Add the eggs, 1 at a time, beating well after each addition.

4. Slowly add the flour mixture, little by little, until fully combined. Batter should be fairly thick.

5. Turn the mixer speed down to low, and add the chopped apple. Mix until just combined.

6. Grease a 13x8 inch deep baking dish with butter, then sprinkle with cinnamon sugar. Use a spatula to spread the blondie batter evenly in the pan, then bake for 30 minutes until set. Let cool for 15 minutes before cutting into squares.
